So maybe it's the Biter figure that is Adlard? I did find this little bit online which suggests Charlie Adlard is the biter zombie
When it was revealed that New York Comic Con would be selling a limited number of "preview sets" of the first TV figure series, I knew I had to bite. The first TV series includes the TV version of Rick, zombie hunter supreme Daryl Dixon, and two zombies, called the Walker (AKA the Tank zombie, who looks not unlike Kevin Bacon) and the Biter (better known as the Deer Zombie, played by comic artist Charlie Adlard). Much like the comic line, the TV figures feature plenty of articulation, lots of relevant accessories for the humans and some neat action features for the Walkers.

Does anyone know if that sounds about right or? I remember when my LCS got these the owner was saying something about one of them being artist Charlie Adlard....

I guess Adlard is the Biter, but definitely not the Jim Carrey Zombie. Kirkman is actually asked about that one in this interview: http://popwatch.ew.com/2010/11/01/walking-dead-amc-pilot-kirkman/
EW: There was one zombie in the show that looked just like Jim Carrey, who worked with Frank Darabont on The Majestic. Can you confirm whether or not that was a cameo from Ace Ventura? RK: It’s not Jim Carrey at all. And dammit, most days I remember that guy’s name. He’s a great guy. I’ve met him a few times. He works for [visual effects company] KNB. He appears like maybe four times as different zombies in the six episodes.

I think I've seen references to the Deer Zombie that it's actually or based on Greg Nicotero,the fx guy. 
Just checked imdb they say that GN is indeed the deer eater.
